Fresh potatoes contain a high percentage of moisture, making them highly perishable and difficult to store or transport over extended periods. For our customer, establishing a new potato dehydration facility required a reliable processing line capable of handling fresh potatoes with approximately 85% moisture while consistently achieving a final moisture content of 5–7%. Maintaining product quality throughout the dehydration process was critical to producing a stable, market-ready product.
The customer required a processing solution capable of converting fresh potatoes into uniformly dried potato chips while maintaining the desired moisture content, colour, and overall product quality. At the same time, the production line needed to support continuous operation to accommodate higher processing volumes and improve operational efficiency.
To meet these requirements, the customer sought a fully integrated dehydration system capable of automating every critical stage of the process, from raw material handling to final product discharge.
